Regarding Cooking, Cavemen had No cooking until the later caveman who had finally developed cooking but used it sparingly, most likely for large meat animals. it was a lot of work. So Caveman even then ate most of his food raw. From your stand point you should know that Cooking with heat over 116 degrees destroys the enzymes that come with the food, plus much of the food value. Therefore, it is a good move to try to switch over to eating as much as one half of your food raw duplicating more like cavemans pattern. Of all the cooking methods, steaming destroys the least food value. The higher the temperature, the higher the nutrient loss. A steamer is simply a pan with a screen holder for food to sit above boiling water. When in China we visited some ruins of a 5,000 year old village that had found clay pot steamers with the top pot having holes punched in it, we saw it at the museum. Steam your vegetables just to the point of still crunchy. The crock pot that has a low setting (hi and low) is a low temp all day cooking system that may be helpful. Pop any mixture of meat and veggies in the crock pot when you leave in the morning. It cooks all day at very low temperature and is ready to eat anytime when you come home in the evening. Most diabetic books on the subject of saving food value warn not to use a microwave since the temperature created is so high that much food value is out the window. Some vegetables such as carrots are off the diabetic person list cooked, but are fine for a diabetic when eaten raw. (also onions) Cooked, too much sugar is released all at once. This is called High Glycemic, which means it is a food when cooked releases a lot of sugar all at once Remember, many foods are good dried. (even dried meat totally uncooked) (modified jerky) see our section on that method that caveman had readily available le and apparently used extensively. Our dried food article is great for traveling and most people really like it and makes great snacks that the kids love to eat on the road. Tips for diabetic eating when on the road. When we travel we take along a small steaming pan. Many furnished suites do not have them. Last trip we picked up a screen simple strainer with a handle and just set that inside a pan with veggies over boiling water. Worked just fine. By the way, if you are not on to motels with cooking etc check out places like Motel 6 units called Studio 6. Real reasonable, around $60 bucks a day for two seniors. There are many others that have these, we just happened to get on to 6 Suites. Our total for a week in Atlanta with senior discounts, was $253.00 Nice little kitchen with frig and microwave, two burners etc. This is ideal for diabetics, because you can control what you eat and raid the frig any time of the night or day. By the way, in Arizona, I have six fully furnished homes I rent the same way, mostly 4 bedrooms and is great for diabetics again, because you have complete control of your diet etc. You can find my type of vacation home on the internet, by entering the words vacation home. One of the most popular sites is VRBO.com, with listings all over the country, including mine. Also world wide listings, The only thing you need bring to these is your toothbrush. Most have a 3 day minimum and have weekly and monthly rates. Several couples traveling together or a large family will find renting furnished homes like this very inexpensive, since you prepare your own meals, do your own wash etc. Some of my homes sleep up to ten. Several hotel chains have these suites with kitchens and we have not checked rates on the other Motel owned suites. I bring this up because many people are not on to this and we find eating in restaurants, time consuming, expensive and get only part of what you want to eat that fits your diabetic diet at best. You are likely to get trans fats (Define), MSG (Define) and all sorts of things you are getting away from. Often even the help are not sure since much of the food comes pre-produced and shipped in basically pre-prepared, only needing reheating.. (trans fats food does not spoil readily so foods can be stored ready to serve almost) We try to avoid fast food and chain restaurants which nearly all use trans fats, MSG and HFCS (Define) (high fructose corn syrup) In case you are not on
to it yet, MSG is a food additive that enhances flavor and keeps it from
spoiling. Many use it on salad bars to keep the lettuce etc appearing
fresh, and some use it everywhere to enhance flavors. Has some bad
negative affects you should avoid. Stands for Mon Sodium Glutamate.
