In Europe, they believe corn is not human food and are amazed Americans eat sweet corn. Actually corn is not a vegetable.
It is a grain like wheat, barley or rice. All are grains domesticated from wild grasses.
When you take corn out of the American diet picture, fruit and vegetable intake of the average American is actually quite small.
The fast food formula is a token leaf of iceberg lettuce and a tiny sliver of tomato on a burger.
Various studies have shown that the micronutrients in fruits and vegetables decrease the risk of cancer.

Our ancestors had much more nutrient rich foods overall then available to us today, so to make up for this we have an advantage in that we can get vegetables ( and fruit but not applicable for a diabetic, current fruit too high in sugar) year around.

Even with this world wide availability vegetables, have shown an almost fifty per cent drop in nutrients in the last 20 years.
Thus a fairly large quantity of vegetables should be consumed per day to see these many positive benefits in making up for lowered nutrient foods.

To anyone who thinks this sounds like something they cannot do and justify a lack of vegetables in their diet by taking a multivitamin, be aware that this turns out to be an ineffective crutch.

Supplementing individual vitamin intake, looks good on paper but as opposed to actually eating the fruits and vegetables, does not provide the same benefits. A diabetic particularly needs the fiber.

Multivitamin supplements certainly have their benefits, but they cannot successfully be used totally as a basic replacement for having a quantity of vegetables in the diet.
Personally I believe our ancestors, or at least mine, ate vegetables only a small part of the year, but I am finding what food we are eating from the super market is currently containing way less nutrients then even 1950 and that was undoubtedly way down from what our ancestors were eating, at the turn of the century.
Vegetables for one thing, are now being selectively bred like fruits For size taste sweetness and color, ( salability ) Nutrient content never was an issue)
Carbohydrates turns out to be the big Issue for diabetics and those of that are obese and boils down to Insulin blood glucose levels and the resulting "Insulin Management".
Diabetics have been caught up in the industry upbreeding for color size and for sweetness, sweet sells.
One of the causes of Inflammation and degenerative diseases is the high omega-6 intake partly due to the vegetabe oil Americans have been sold on using in modern cooking. As we mentioned, Corn oil has an omega-6 to omega-3 ratio of 83 to 1.

Surplus cottonseed oil hydrogenated ( hydrogenation makes a liquid oil appear as a solid) they made started years ago) into margarine and ran big promotions convincing the public butter and coconut oil (both top health foods) were killing you and you needed to switch to their vegetable product. (margarine) (Crisco etc)

A big percentage of the population still believes that, sales pitch, even though it has long been proven that these vegetable man made products were a health disaster.
The oils hydrogenated (become "trans Fats" and are used big time for fast food and chain restaurant cooking......this has allowed restaurant chains to cook meals in a factory, and ship them by semis to their chain restaurant franchises.
When pre cooked in their (hydrogenated) trans fats, long shelf life feasible to serve them as freshly cooked two weeks later.
Thus trans fats..(Hydrogenated man made vegetable oils) have been a health disaster and are being banned by law in some areas finally. (use in restaurants.)
If you eat out, you are going to eat it, most likely, whether you are aware of it or not.
Almost no restaurant chains have eliminated trans fats and worst of all is the addition of man made MSG. (Mon Sodium Glutamate) Also renamed to new terms to disguise its use, by many since the public is becoming aware to avoid any food with this MSG added and appearing on the label.

This is the artificial substance that has NO PURPOSE no food value, and no other use or purpose other then to fool your taste system, and it actually uses an odd ball system to do just that. It is very successful in deceiving your taste system to believe warmed over cardboard is wonderful.

Everything tastes terrific when you eat out, we just "have to eat out more often"........and they succeed, with a small investment in this chemical additive.
Soybean products are a disaster and should be avoided entirely. (Except fermented) Long story, takes a book, vest to avoid all soybean totally.

Nevertheless, no matter how you watch labels (few or non on restaurants or Omega 6 in meats,) several sources indicate that humans evolved on a ratio of about 1 to 1,

Overall they say that in Western diets the ratio averages now overall 16 or more to 1 .
A diet too high in omega-6's, and too low in the omega-3's has been linked to various diseases including cardiovascular disease, cancer, and (now tracked down as chief cause of inflammatory and autoimmune diseases...) (degenerative diseases like cancer, strokes, cardio vascular, Alzheimer’s, diabetes etc.

In contrast, a low ratio of omega-6's to omega-3's, similar to what we ate in the past, (and closer to caveman’s 1 to 1, has a host of benefits, including these diseases that are causing the American health collapses to be prevented.

It is not only vegetable oils to avoid, manmade substances and chemicals added,, the factory raised force fed confinement meats, which are guilty for the poor fatty acid profile in the Western diet.
These Factory force fed farm animals such as cattle and pigs are fed corn (now genetically modified corn) spiked with chemicals, hormones and huge quantities of antibiotics, because cows cannot normally eat corn and survive, and these animals in general just cannot survive in these conditions, without high antibiotics etc, (new health concerns, another long story) often raised from birth living in their own excrement to their knees,

Wild and free-range traditional animals and most farming prior to 1950. all of the animals that have until now always fed on wild grasses and free range, have a much more favorable fatty acid profile, and thus were much healthier for human consumption.

(All of the meat (and butter) from New Zealand is grass raised, they have NO corn or hay.) Most from Australia also but not all. .
Further, domesticated (feedlot) animals have much higher proportions of fat in general, factory farmers find if they can produce high insulin with grain feed (same thing that happens to humans) (that’s how you get obese) and develop much more saturated fat in particular, than wild animals.

Wild animals almost always show an up and down seasonal variation in storage of fat, and even the very fattest wild land mammals contain as much as 75% less total fat than the average domesticated animal.

What is your solution to solve what this is doing to you?
You can eat wild game like venison, grass raised bison, and birds like pheasants, and ducks, these are always a good option, but if you can't afford or have access to these delicacies, then your best option is to eat only the leanest meat (such as sirloin and chicken breasts), find sources of grass raised beef and range raised poultry and eggs, and get your needed fatty acids from there and supplement with smart choices like wild (not farm raised, same problem) cold water fish (mackerel, salmon, sardines), and the plant sources such as nuts, (no peanuts or cashews) flax, avocados and olive oil
